The Best Pork Tacos Ever

If you’re up for a drive, there’s a hoppin’ little Mexican restaurant downtown Sparta called Trini’s. Thanks to Local GR Eats friends, Kim & Cindy, we decided to give them a try for lunch this week.

From the main road in Sparta, it almost seems as though Trini’s is hidden. Signage is very minimal, but there is a neon cactus in the front window and that’s what gave it away. Upon walking in it felt like there was a fiesta happening all the time. Even though I was still standing in the doorway, I knew this was going to be good.

Signage indicates all you can eat tacos on Thursdays. And, during other times of the week, if you eat more than 13 tacos you get your name on the wall of fame. The guy at the very top actually conquered 37 tacos!

Lunch specials are basically just smaller portions of a few of the dinner items. I ordered the chicken enchiladas and my husband ordered the pork tacos. We also got some chips and salsa…homemade salsa! The service was super fast so our food was out in no time. My enchiladas were awesome, but what was even better were the pork tacos. The pork was marinated in a sweet type of sauce. It was some of the best pork I had ever had. I hinted to my hubby that I would be more than happy to have a second bite, and even a third. When the hints didn’t work I flat out told him that was the best pork I had ever had, hoping he’d eventually catch on and offer me some more. No such luck. Turns out he too thought it was the best pork he’d ever had and he wasn’t up for sharing any more.

My enchiladas were awesome, but you can bet your sweet Coronas I’ll be ordering pork tacos next time I visit Trini’s.

We had a brief moment to speak with our waitress about Trini’s and she informed us that its owned by two brothers, Trini and Joe. The restaurant is officially named Downtown Trini’s and the bar is called Margarita Joe’s.

Trini’s was hopping for lunch and I’m guessing dinner is no different. Next time you’re in Sparta make it a point to stop in and have a little fiesta yourself.
